Wide shot of vineyards with speakers \u003cbr/\u003ePeople have long talked to their plants in the belief that it is beneficial to their growth.\u003cbr/\u003eNow wine producers in South Africa are taking plant talking to a new level. \u003cbr/\u003eThey're serenading grapes to improve the the flavour and relax the vine. \u003cbr/\u003eBut is it science or just good PR ? \u003cbr/\u003eAnyone for a glass of Vivaldi? \u003cbr/\u003eThis vineyard in Stellenbosch claims the grapes are soothed by the sounds of classical music. \u003cbr/\u003eDemorgenzon Estate has taken an innovative approach to making their wines stand out in what is a competitive industry.\u003cbr/\u003eHere, baroque music is played to the vineyards 24 hours a day, seven days a week. \u003cbr/\u003eDemorgenzon Estate, whose name means the morning sun in Dutch, dates back to 1699.\u003cbr/\u003eWinemaker, Carl van der Merwe believes the grapes are more relaxed when listening to classical music. \u003cbr/\u003eThe vineyard has been playing music for the three years and van der Merwe claims as a result he has a longer period in which to harvest:\u003cbr/\u003e\"As a winemaker I'm looking for optimal ripeness as opposed to under-ripeness or over-ripeness, and this normally happens in our hot climate, in a very small window. So when this window is made bigger it gives me more flexibility to pick the fruit and to have an optimally ripe wine at the end of the day.\"  \u003cbr/\u003eLittle research has been carried out to understand the ways in which music aids plant growth, but Professor Lise Korsten, from the University of Pretoria, is starting to collaborate with Demorgenzon to understand more. \u003cbr/\u003eShe says there is some evidence that cell wall structures are influenced by the strains of Vivaldi, but this is yet to be proven:\u003cbr/\u003e\"The impact of music on plant cell growth or bacterial growth, directly impacts on the growth rate. There's some evidence of that on cell wall structures and then also on the cell content.\"\u003cbr/\u003eIt's not the music but rather the sound waves that have an effect on plant growth, she says:\u003cbr/\u003e\"The different types of music, or the different sound waves can then ensure enhanced growth, faster cell growth, and directly impacting on the cell membrane.\" \u003cbr/\u003eAlthough this has yet to be proved, Korsten thinks that baroque music has the most positive effect on plant growth.\u003cbr/\u003eThis is because of the harmonious and mathematically precise nature of baroque music, Korsten says.  And rock music, is not conducive to grape growth. \u003cbr/\u003e\"More aggressive, more rock music, tended to give opposite reactions than this more consistent baroque music,\" she says. \u003cbr/\u003eDr. Albert Strever is a lecturer in viticulture at the University of Stellenbosch he says he is sceptical that classical music has any effect on vines: \u003cbr/\u003e\"I've not come across a single experiment on grapevine in a controlled environment or with replicates, that say that grapevine quality, or growth, or grape composition, is stimulated in any way by sounds. It is derived mostly, the perception, which in some cases sound more like folklore that comes from early days, is more from other plants, and towards other studies and then sometimes a direct conclusion is made from these studies which I don't think is always applicable.\"\u003cbr/\u003eDemorgenzon Estate owner, Hylton Appelbaum came up with the initiative to serenade the vineyards. \u003cbr/\u003eAppelbaum established the radio station, Classic FM in South Africa, and has a passion for classical music. \u003cbr/\u003e\"I've long had an interest in and love for classical music. It was something that my late Dad instilled in us. At the time we didn't think that we were learning to love it but discovered that we did,\" he says. \u003cbr/\u003eA playlist that lasts seven and a half days plays on repeat.\u003cbr/\u003e\"It extends across the breadth of baroque and some early classical music, basically from Albinoni, Boccherini, Cimarosa all the way down to Vivaldi and Zelenka,\" he says. \u003cbr/\u003eAbout 60 percent of Demorgenzon's red wine production comes from the Shiraz or Syrah grape. \u003cbr/\u003eWinemaker Carl van der Merwe describes the young Syrah as spicy and peppery with slightly herbal undertones.\u003cbr/\u003e\"This particular wine came from a vineyard that actually had the music being played to it, and I'd love to tell you that I can hear the sound of baroque music in the glass. But we believe that the music in this particular block has steadied the growth, and given it a slightly more even growth and a slightly more delayed physiological process, which allowed me to pick this fruit a bit later than the rest of the blocks - give it a bit more hang time, and funnily enough the alcohol on this wine was not as high as we'd seen on the other blocks,\" he says. \u003cbr/\u003eDemorgenzon has received good reviews from prominent magazine, Wine Spectator.\u003cbr/\u003eThe Syrah has been singled out for its good value, selling in the USA for about $15 US dollars per bottle.\u003cbr/\u003eChinese visitor, Yiting Yang is enthusiastic about the musical wines: she says there's something noble about the taste:\u003cbr/\u003e\"I'm not sure how to explain - although the flavour of the wine is very natural but somehow you can see that there is something different - elegant. Maybe because the grapes are educated with the classical music, you can feel something noble, something behind it. It's hard to explain, but it's a very interesting project and very good to taste.
