Caviar is the most glamorous and exclusive gourmet food item in the world -  with a price tag to match. Buy a 1.5 kilo tin of Royal Black from this London caviar  store - and you'd pay two and a half thousand dollars.\u003cbr/\u003eSOUNDUP: \"The fish is harvested when it's about 30 years old, so the eggs are quite  large, good colour, good taste, a slightly nutty flavour.\"\u003cbr/\u003eCAPTION: Gemma Woolford, Caviar House\u003cbr/\u003eBut now this rarest of foods looks set to become rarer still. The giant Beluga sturgeon,  which can weigh more than a tonne and live to 150 years, faces extinction. \u003cbr/\u003eRussia and Iran are the two main exporters of caviar, and during the Soviet era the  fishing industry was closely controlled. Now that's all changed. There's pollution, over- fishing and poaching. At least half the total sturgeon catch each year is believed to be  illegal.\u003cbr/\u003eThe W-W-F says the result has been catastrophic:\u003cbr/\u003e\"90 per cent of the world's caviar comes from the Caspian Sea. It actually comes from  just three species of sturgeon, and all of these sturgeon are threatened with extinction  today. The sturgeon evolved about 250 million years ago. They're prehistoric fish.  They've outlived the dinosaurs. Royalty, business tycoons and film stars are among the clientele -  and the prices aren't for the faint-hearted.\u003cbr/\u003eA main course of Almas caviar costs, astonishingly, more than two thousand (correct)  dollars a serving - although that does include sour cream and potatoes.\u003cbr/\u003eSpokeswoman Suzy Boeckmann, Caviar House restaurant, says caviar is something  unique - and it's vital to save the industry from destruction:\u003cbr/\u003e\"Well it makes you feel good. They say it's rather like your first relationship. The first  time it's rather strange, but after that you get used to it. It gets better and better.
