We can earn some money too, but it's true that only doing this is not profitable.\"\u003cbr/\u003eWhile the industry struggles to stay afloat, in the harbour of Villefranche, a lasting monument reminds visitors of the village's fishing history.\u003cbr/\u003eThe Chapel of Saint Pierre was built in the 16th century and belongs to the union of fishermen of Villefranche. \u003cbr/\u003eJean Cocteau first saw the chapel in 1924.\u003cbr/\u003eIt was first used as a stock room for fishing nets, but in 1957 Cocteau started decorating the interior. \u003cbr/\u003eHe painted the walls and added stained glass windows. \u003cbr/\u003eThe walls depict five different scenes; two which display stories from the Mediterranean, while the other three show tales from Saint Peter's life. \u003cbr/\u003eBut as Villefranche emerges as a booming  destination for tourists and the super-rich, the strain is beginning to show on the village's small remaining fishing industry.\u003cbr/\u003eJust as the number of fishermen here has shrunk, so too has the wealth of certain fish which once called these waters home.\u003cbr/\u003eThat's according to Louis Roux's brother Jean-Paul Roux, the President of the Fisherman's Union of Beaulieu, Saint Jean Cap Ferrat and Villefranche-sur-Mer.\u003cbr/\u003eHe says that European Union fishing quotas and pollution have also contributed to the depletion of fish stocks. \u003cbr/\u003e\"Fish that could be found twenty years ago, we almost can't find anymore,\" he says.\u003cbr/\u003e\"Now we have new fish, fish that existed elsewhere but new here. We have barracuda, small albacore tuna; you have fish that we didn't catch before, but we catch it now in big quantities.\"\u003cbr/\u003e\"Anchovy and sardines, that fish disappeared. But that is because of pollution, not because of overfishing as says Europe, that thoughtful sweet Europe.\"\u003cbr/\u003eJean-Paul Roux says this makes things difficult for restaurant owners, who rely on their daily catch to satisfy the town's hungry visitors.\u003cbr/\u003e\"A person that owns a restaurant can't count on a regularity in fish catches. Of course restaurant owner wants to know what he will get 24 hours before and we know it only on the same day.\"\u003cbr/\u003eWhile the fishermen struggle to satisfy demand, restaurant owner, Benoit Mathieu, doesn't see any problems.\u003cbr/\u003eHe says their diners enjoy seeing daily deliveries of fresh fish.\u003cbr/\u003e\"Regarding clients, they see fish arriving in the morning at the restaurant, that is very important for us, and it is also a pleasure to work with such good quality products,\" he says.\u003cbr/\u003e\"(The fish) arrives here, so there is no transportation (cost) for it. And we have a big quantity of bonito fish (mackerel, tuna, etc.) here.\"\u003cbr/\u003eAccording to France's Ministry of Agriculture and Fishing, in 2010 the average consumption of fish and seafood per person in France was 35.2 kilograms (71 pounds). \u003cbr/\u003eIn the kitchen of restaurant La Fille du Pecheur, chef Pascal Briquet agrees in the need for locally sourced fish.\u003cbr/\u003e\"Local fish catch? Yes, it is very important because it is profitable for clients, they are more satisfied because they know it is a wild fish,\" he says.\u003cbr/\u003eAs Damien Roux hauls yet another catch ashore, passing tourists enjoy watching a Villefranche tradition still in existence.\u003cbr/\u003e\"So, we watched this this morning and it was very fun to watch it come in, right off the boat and see some of the preparation.
