Discovering Enzymes

Junior biologists examine enzyme activity through two lab activities. In the first, they add hydrogen peroxide to a piece of potato, and in the second, they attempt to change the rate of the reaction. They also mix potato juice with acetone and discover its effect on the protein in egg whites. Mostly, this is just a set of activities demonstrating enzyme action, useful for your biology curriculum or physiology class.
