Students identify and interpret the fundamentals of freezing, refrigeration, and microwave heating. Then they identify that the majority of food processors utilize either heating, cooling or both in their respective operations. Students also identify that heating is generally not accomplished by microwave energy in the food industry and a large portion of food preparation is done in microwave ovens.
