Eight different materials, half of them hydrophobic and half of them hydrophilic, are placed into vials. Lab groups drip water and ethyl acetate into each to watch for separation. Groups share information and then test a few unknown materials in order to determine what they are. The point of the lesson is to separate phases. Use it with upper elementary or junior high physical science lessons on phases of matter or solutions.
