Red cabbage is more than just a garnish for your salad. When blended into juice, it is a practical and inexpensive acid/base indicator. Demonstrate chemical reactions by mixing red cabbage juice with either vinegar or baking soda. Small groups will enjoy watching the color change from its the neutral purple to either a blue green for a base or red for an acid.
