Irish Potato Products

Students investigate the effects of low and high temperatures on potato products. In this potato products lesson plan, students demonstrate the effects of storage conditions on Irish potatoes. They investigate the effects of frying, they determine the dry matter in a potato by removing the water and they determine the amount of sugar using glucose strips or a glucometer. They compare their results to determine how potatoes should be stored.
